This April, I invite everyone to participate in the Love & Lemons Cooking Challenge! It’s super simple, and anyone can join for a chance to win exciting prizes. All the details are below.
About the Cooking Challenge
Our Cooking Challenge is a fun way to connect with the Love & Lemons cooking community. Each month, I’ll select a recipe, and all you have to do is follow it and leave a comment on the recipe blog post. At the end of the month, I’ll randomly pick a winner to receive a prize.
I love knowing that so many of you are cooking the same recipe together each month. We’re kicking off this April challenge with a Chickpea Salad recipe, and I hope you’ll join in!
How to Participate
To take part in this challenge, follow these simple steps:
- Join the Love & Lemons Cooking Club by signing up for my email list to receive the monthly recipe updates.
- This month, make the Chickpea Salad.
- Leave a comment on the Chickpea Salad recipe post by April 30th.
Plus, if you send a photo of your dish to cookingclub@loveandlemons.com, you’ll earn an extra entry!

April Recipe: Chickpea Salad
This month’s recipe is a Chickpea Salad. It’s delicious with pickled onions, a refreshing lemon dressing, and fresh herbs—perfect for a spring lunch. If made ahead, this salad can be stored in the fridge for a few days. Just remember to add the mint right before serving!
Feel free to customize this recipe with different herbs, veggies, or even add feta cheese. Get creative and let me know how you’ve put your twist on it in your contest entry.

Last Month’s Recipe
Last month, we made a breakfast casserole, perfect for meal prep or a brunch with a crowd. Here are some fun variations that you all shared:
- Irais used cauliflower instead of peppers and spinach, adding oregano, tarragon, onion powder, and sumac.
- Adrienne used sweet potatoes, bell peppers, and onions.
- Kim replaced potatoes with roasted veggies.
- Melina increased the spinach and added Roma tomatoes with feta on top for a Mediterranean flair.
- Kristin made mini tacos for breakfast from the leftover casserole.
