Introducing the Dish

Cheddar Cheese Baked Chicken with One-Pan Rice is sure to become your new favorite dinner. The chicken is marinated in a homemade ranch seasoning and roasted alongside basmati rice and broccoli, creating a meal that’s not only easy to prepare but also bursting with flavor.

Everything cooks together in one pan, so there’s no need to cook the rice separately. Just mix, bake, serve, and enjoy — you’re guaranteed to fall in love with it!

Memories of Chicken and Rice

I still remember my childhood when my dad would make baked chicken with rice at least twice a week — sometimes even on consecutive nights. To this day, he has a few go-to dishes he makes whenever I’m not around. There are always crispy tacos on Friday nights, pasta, grilled beef, the occasional baked potato, and of course… chicken and rice.

These simple dinners were truly some of my favorites. He never says it out loud, but he’s actually a talented cook — he even makes a delicious cheddar broccoli pasta salad!

Ingredients You’ll Need

Here’s a short list of ingredients needed for this dish:

  • Chicken (thighs or breasts, with or without skin)
  • Plain Greek yogurt
  • Shredded cheddar cheese
  • Ranch seasoning
  • Minced garlic
  • Dry basmati rice
  • Salted butter
  • Chopped broccoli

Essential Tools

You don’t need anything fancy. Just a baking dish about 9x13 inches, a cutting board, a knife, and a few basic cooking utensils. No strange equipment required — just like the way my dad usually cooks.

Steps to Prepare

Step 1: Prepare the Chicken

The Greek yogurt and homemade ranch seasoning are the stars of this dish. Mix the chicken with the cheddar cheese, yogurt, ranch seasoning, and garlic until evenly coated. I usually do this in a bowl before adding it to the pan with the rice.

Step 2: Prepare the Rice

First, place the dry rice — I prefer basmati — into the baking dish, then layer the chopped broccoli on top. Pour in some water and add a few pats of salted butter. Place the chicken on top of the rice and broccoli, seasoning with a little salt, pepper, and any remaining ranch seasoning.

Step 3: Bake

Bake for about 30 to 40 minutes, until the rice is tender and the chicken is cooked through. If the rice is still firm, you can add 1/3 cup of water and bake for another 10 minutes. The chicken won’t dry out because it’s roasting on a bit of water.

Step 4: Serve and Enjoy

Once the dish is ready, serve the chicken, rice, and broccoli topped with some fresh cilantro or parsley. It’s truly a wonderful comfort meal!

Additional Suggestions

If you’re looking to make a side dish, consider baking a simple 5-ingredient beer bread to complete the meal. Adding a simple salad will also make the dish more appealing and fiber-rich!
