Discover Liu Kou Shui, a unique eatery in Singapore serving spicy green chili ramen and mala char siew rice. Delicious dishes at affordable prices await you!
Introducing Liu Kou Shui
If you're in search of a fresh culinary experience in Singapore, look no further than Liu Kou Shui. This charming eatery was opened by 26-year-old Xiao Xuan and her mother in December 2022 at the Bukit Canberra Hawker Centre. With a family background in the food industry, Xiao Xuan has pursued her passion for gastronomy through culinary education, from Nitec at ITE to a bachelor's degree in international culinary arts management.
A Tempting Menu
The menu at Liu Kou Shui revolves around eight different rice dishes, with the option to swap for ramen served with one of two homemade sauces or brown rice for a small additional fee. I tried the Beef Sukiyaki Don (S$8) and opted for ramen with the green chili sauce (+ S$1). This dish features sautéed beef with onions, bell peppers, and sukiyaki sauce, all beautifully layered over ramen noodles.
The blend of spiciness from the chili and the subtle sweetness from the onions and bell peppers creates a harmonious flavor profile. A poached egg on top adds an extra touch of creaminess that makes the dish even more appealing. If you’re a spice lover, the green chili ramen here will surely satisfy your cravings with its complex heat and faint smoky aroma.
Mala Char Siew Don - A Must-Try Dish
One of the dishes I was most looking forward to was the Mala Char Siew Don (S$7), featuring rice and crispy slices of pork belly. The pork is marinated for 24 hours before being grilled, resulting in a crunchy exterior and a tender, spice-infused center. The mild spiciness of the mala sauce, combined with the freshness of the vegetables, creates a delightful experience. However, one area for improvement would be the rice, which was a bit soft and could benefit from a touch more seasoning to enhance the flavor.

Interesting Side Dishes
Liu Kou Shui also offers a variety of enticing side dishes. One standout is the Cold Tofu (S$2), made from silky tofu and soy sauce, topped with bonito flakes and scallions. This dish provides a refreshing and light contrast, perfect for cleansing the palate between heartier main courses. Additionally, the Kelp Salad (S$2.50) is simple yet delightful, featuring seaweed, sesame seeds, sesame oil, and soy sauce, offering a light and refreshing option for diners.

Xiao Xuan has proven that youth is not a barrier to pursuing culinary passion. With her creativity and understanding of flavors, I look forward to the unique dishes she will introduce in the future.
