Use something to stop the knife. Utilizing chopsticks or any kitchen tool of similar size (no larger than 1 cm) can help guide your knife and prevent cutting too deep. But don’t fret if you accidentally slice all the way through! They’ll still taste amazing.

Experiment with different seasonings. I keep this recipe simple with just salt, pepper, and garlic powder. Feel free to add any dried herbs or spices like onion powder, paprika, chili powder, dried rosemary, or your favorite seasoning blend.

  • 1/2 teaspoon garlic powder

Instructions

  1. Gather and prepare all ingredients. Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Wash and dry the potatoes. Place the potato on a cutting board with the flattest side down.
  3. Place a pair of chopsticks or similar kitchen tool beside the potato to guide your knife. Using a sharp knife, make cuts about 0.3-0.6 cm apart along the potato, being careful not to cut all the way through.
  4. In a small bowl, mix together the oil, salt, pepper, and garlic powder. Place the potatoes on the baking sheet and brush half of the oil mixture over the tops.
  5. Bake for 35 minutes, until the potatoes start to soften and the cuts begin to open up. Remove the baking sheet from the oven and brush the potatoes with the remaining oil, trying to get it into the layers.
