Fried Kway Teow: Traditional Flavors in Ang Mo Kio
If you're on the hunt for an irresistible dish in Ang Mo Kio, look no further than Fried Kway Teow. This beloved stall is located in the Ang Mo Kio Central Market & Food Centre and is a favorite among locals. While it may not boast a flashy sign, the name "Fried Kway Teow" speaks for itself.
This stall has been run by an elderly couple for 43 years, and regular customers will recognize the friendly auntie taking orders on a large brown paper, while the uncle skillfully fries the dish. Fried Kway Teow serves just one dish, available in two sizes: S$4 for the small portion and S$5 for the large. Both come with cockles and chili, but you can request them to be left out if you prefer.
Quality and Experience
On my recent visit, I invited my colleague Aaron, who has a wealth of culinary experience, to join me. We shared a plate of Fried Kway Teow (S$5) and opted for both the cockles and chili to get the full experience. From the very first bite, I was impressed by the delectable flavors; the dish was served piping hot with steam rising.
As we sat down, the smoky aroma from the wok hei wafted through the air, making it hard to wait to dig in. Aaron mentioned that the quality can vary. "There are good days and bad days," he shared. "On off days, the dish can be a bit soggy." But today was indeed a good day. Our plate of Fried Kway Teow was not only delicious but also rich in garlic flavor, with a fantastic smoky taste.
Noteworthy Ingredients and Flavors
In the Fried Kway Teow, you'll find familiar ingredients like sliced fish cake, lap cheong (Chinese sausage), cockles, and bean sprouts. However, we received relatively few cockles and lap cheong, making it feel like a little treasure hunt. Notably, the lap cheong is pre-grilled, adding a subtle savory flavor that pairs wonderfully with the dish.

With each bite, the pork fat tossed into the pan with the kway teow absorbed the sauce perfectly. While the exterior of the fat seemed soft, the inside remained puffy and crispy, creating an enticing combination of smoky, salty, and umami flavors. These pieces of pork fat were incredibly addictive, making me forget all about my diet.
